A simple and satisfying breakfast bowl.

Skip to step 5 if you want to use our Crunchy Potato recipe instead of a single roast of potatoes.

Optional additions: spinach, chives, balsamic, tomatoes

Step 1

Preheat oven to 425°F.

Step 2

Cut potatoes into small bite-sized pieces.

Step 3

Cover potatoes in olive oil, salt, pepper and/or herbs and spices of your choosing.

Step 4

Bake/roast potatoes for 20 minutes.

Step 5

Fry up some some bacon then place on paper towel to soak up the excess grease.

Step 6

Cook an egg to your liking adding salt and pepper.

Step 7

Combine and serve.
